170 g of butter
170 g of sugar
150 g of chocolate
70 g of breadcrumbs
150 g of dark chocolate
250 g of sugar
125 mL of water
1 teaspoon of oil
What Sachertorte Tart is
What it is not: The original Sachertorte Tart. The original one is sold in the Hotel Sacher in Vienna, where it originates from, in the Hotel Sacher in Salzburg and in the Cafés operated by the hotel. Beyond that, it is shipped world-wide to horrendous prices.
Unsurprisingly, the recipe is protected like the Coca Cola formula or the Israeli nuclear weapon program. The good news is: After all, Austria′s most legendary tart is simply a chocolate tart (even if it might be a particularly good one) and not that hard to copy. Therefore, the recipe given here is only for a Sacher-like tart, but a nice one.
How to prepare Sacher Torte
Mix the butter with most of the sugar, the melted chocolate and the yolks (to be added one by one) until foamy. Add the breadcrumbs, whip the eggs with the remaining sugar until very stiff and mix it with the chocolate dough. Pour the dough into a greased shape and bake it in a pre-heated oven at 160 degrees Celsius for one hour.
Then remove the base from the shape and cut it horizontally into two halves. Fill it with apricot jam (add a bit of rum, if desired) and coat it with chocolate icing from the dark chocolate, water, oil and sugar. Serve with whipped cream.
