Austrian Christmas Cookies: Ploberger Schnitten
Ingredients
220 g butter
180 g sugar
5 yolks
1 egg
220 g grated walnuts or hazelnuts
220 g grated, dark chocolate
some vanilla
80 g of flour
5 egg whites
lemon juice of one lemon
What Ploberger Schnitten are
Ploberger Schnitten are somewhat untypical for Christmas cookies: Their chocolate base and sugar-lemon icing doesn′t have the spices of gingerbread nor other reasons to associate them immediately with Christmas.
They are a miniature version of a cake not dissimilar from brownies, yet very tasty with the dominant impressions from chocolate and the icing. For a more Chistmassy variation, try to use mint liquor instead of the lemon juice in the icing.
How to prepare Ploberger Schnitten
Mix butter, sugar, 5 yolks and 1 whole egg until foamy. Add the remaining ingredients and spread the dough on a baking sheet. Bake them at 180 degrees Celsius for approximately 20 minutes. For the icing, mix 300 g of icing sugar with 3 tablespoons of rum and 3 tablespoons hot water, strong coffee, lemon juice OR mint liquor (the original version is hot, strong coffee). Ice the cake, let it cool and cut individual cookies.
